Warning: these chickpeas are highly addictive 🤤

I hope you’ve had a great week so far.

I’ll be honest - when I first heard about fried chickpeas and zucchini, I wasn’t entirely excited. But after the first bite? Total game-changer.

The soy sauce fits soo well to the chickpeas, and combine that with yogurt and you’ve got a true winner.

I got quite addicted to this recipe, and the local shops must definitely have been wondering where their zucchinis/cougettes had go to.

But where’s the vegan?

A lovely reader pointed out that the last email had ZERO vegan recipes in it, and they are completely right.

So, to make up for it: here’s a completely vegan rocket (arugula) and pumpkin salad, complete with yummy pesto.

I had kinda been saving it for the autumn, but now you’ve got something to look forward to 😘

You can also make the chickpea dish totally vegan by using a soy (or similar) yogurt, by the way.
