At our wedding a couple of years back, we had several gluten-intolerant friends coming as guests. We ordered an extra cake just for them - and it was more popular than the rest combined!

It got me thinking a lot about gluten-free foods, and since then we’ve tried out lots of recipes.

One of the clear winners in testing was this crustless Caprese quiche. It’s really simple, GF and very tasty indeed!

I love it because you can make it in little bowls or ramekins and change the flavour for everyone, if you so wish.
