How to start the week stress-free

Hey there healthy veggie!

I hope you’ve had an awesome weekend so far.

If you’re anything like me, you’re probably thinking about the week ahead. And I think a lot about food 🤗

Thinking about what to eat this week…

I’ve found that having a plan for the upcoming week makes things a lot easier.

It means you have food to really look forward to, and stops that sudden ‘but what am I gonna eat tonight?!’ frustration after work on a busy Monday.

Planning ahead also means saving cash 💰 as you don’t panic order a takeout, and that’s always good in my eyes 👁️👁️

Here are a few of the recipes I’m planning to eat this week:

Dinner:

Nice and simple, all made in one pot. Far less washing up 🤗

This Mexican dish is my absolute fave for big batches. Make ahead then freeze more servings and you’ve ALWAYS got something awesome in the freezer to fall back on.

Lunch:

Probably the lunch I’ve made the most since we started Hurry The Food Up. I’ll try and get a quick video of it up this week to show how easy it is. It says seven minutes here, but I’ve got it down to 5 😉

It’s no secret that I love sandwiches, and I often eat them during the week. Cucumber is my fave in the summer. A quick note - when not making sandwiches for high-society garden parties and serving on a silver platter (as you’ll see in the link below), I use wholegrain bread 💪🏽

Breakfast:

Still the easiest pancake I’ve ever made, and you can also pack it up and take it with you if needed. My fave topping is PB and maple syrup, but each to their own.

Sometimes a simple smoothie is hard to beat in the mornings, and they don’t come much better than this. 27g of protein, too, and you can make it the night before if you want 😎

There we go then folks, plan a few of those into your week and you’ll be off to a very solid start.
