Six cats and an omelette

Hey healthy veggie,
I hope you’ve had an awesome weekend so far!
The first meal I ever learned to cook was an omelette, and it always stayed with me.
There’s a lot to like about omelettes, especially for vegetarians.
They have loooooads of protein, and once you get them hang of them, they are very easy to make. You can also change up the fillings however you like.
Which leads me on to…
Greece 🇬🇷.
I’ve been to Greece to many times and love the country. The food surprised me so much - I knew it would be tasty, but I didn’t know it would be so veggie-friendly!
Over the years we’ve also adopted six cats from the streets of Athens 😅. Here are the latest two, Valentina and Apollo (sister and brother).
Ok, back to the food! Today’s new recipe is a Greek omelette with feta!
It captures the flavour of the Mediterranean, and as usual, is mega easy to make.
I hope you enjoy it as much as we did creating it!
