Quick veggie dinners

Hey healthy veggie,
I hope you had an awesome weekend and are ready for the week!
Yesterday, I was testing a new Chinese tofu and soybean paste recipe. It was really tasty, but felt fiddly and time-consuming.
However, after I broke the recipe down into simple steps, it turned out to be very easy. It took me about 30 minutes, but I know next time I’ll be able to get it down to 20.
I’ve found one of the toughest things about eating healthily is busy, long days at work and very little time in the evenings.

It definitely helps to find recipes you love - and get them on repeat! The more you make a meal, the better and quicker you get at it.
I’ve found it’s the best way to get high-protein meals in (sooo important for us vegetarians) and it’s always something nice to look forward to at the end of the day as well.
Here are some of my fave dinners that I can virtually make blindfolded (and with practice, you’ll be able to, too!)*
*please don’t actually try them blindfolded, for obvious reasons 😬
