And some unusual Labor Day recipes

Hey healthy veggie,

I hope you’ve had an awesome week. And if you’re in the US, that you’re looking forward to a nice, long weekend.

Our new adopted cats will arrive from their shelter this weekend, so we’re rather excited.

One is half-blind, and the other has no tail, but we’re looking forward to giving them a happy hew home 🐈 🐈‍⬛ 🫶🏼

Ok, question time: if you needed to make your week as efficient as possible, while still really looking forward to dinner time, how would you do it?

The caveat: the recipes need to be high protein so you stay feeling full for hours, and need to be so tasty you can’t wait to eat.

Here’s how I’d do it.

I’d start with recipes that are really easy to prep and pack, and speed up my mornings. I’d make them the night before.

And then I’d make dinner that I really look forward to. The type that have me day-dreaming about them.

I was chatting to a good buddy of mine over in Texas about this, and he said in his family they barbecue as much possible between Memorial Day and Labor Day.

They also try to use as much corn and asparagus as they can. So I went digging and found some of my favourite recipes that include them.

The cheesy corn chowder is soooo good!
