Four and a half fantastic soups
Hey healthy veggie,
I hope you’ve had an awesome week so far.
The house we recently moved to has a 300-year-old oak tree at the edge of the property. Last week, the temperature suddenly dropped overnight.
I actually had no idea that it takes just one cold night for leaves to fall, but apparently it does, and they certainly did 👇🏽 🍂
We awoke to a literal carpet of leaves, and the feeling that summer is long gone and Autumn/Fall is most definitely here 🍁
We’ve raked all the leaves into a massive pile and hope a little hedgehog or two decide to make it their home for the winter.
With the colder temperatures outside, it’s very much put us into soup mode. We’ve been testing various ones all week, and here are some of my current favourites.
I’m also working on a revamped leek soup which I’ll share next week :)
