Don't do it

Hey healthy veggie,

I hope you’ve had an awesome week so far. It’s dark and cold here, the winter nights are coming on thick and fast. And they’ll only last five months or so… 😅🥶.

This week, I managed to re-injure my back at the gym. It’s an old disc injury in my lower back, and it’s horribly painful. I first did it when doing drunken limbo on my 22nd birthday.

They say the biggest regrets in life are the chances you don’t take, and that may be true. But equally, drunken limbo is a really bloody stupid idea and if you never, ever do it, then good on you 😅.

Staying out of the kitchen

Because of that, I’ve been mostly staying out of the kitchen this week, and have been thinking of ways to make my kitchen visits as quick as possible.

Thankfully, my hearty appetite is still there, so I’ve been looking for filling breakfasts that are high in protein and super-speedy. These are my current 10-minutes or less favourites:

Scrambled eggs - a total classic, and even better when done with a couple of simple tricks!

Omelette - the first recipe my mum ever taught me. She knows her stuff.

A very easy way to get some of those ‘5 a day’ in, and who knew you could use cottage cheese in a smoothie?!

And finally, bread and cheese (one of the most awesome combos ever, tell me I’m wrong!).
