Crunchy, creamy, done in 5

Hey healthy veggie,

I hope you’ve had a great week so far!

What’s something you used to do but just don’t have time for anymore?

I used to love buying pomegranates and smacking the seeds out with a wooden spoon 😅. It was messy, but fun!

It was also pretty time-consuming – and it never felt like there were enough seeds. So when I realised you could buy them bagged and frozen, I never really looked back.

Fast forward to today: my kids are obsessed with taking yoghurt to school for lunch. One of my daughter’s friends had a yoghurt pot, and then she wanted one too. I can’t say no when she’s asking for a healthy lunch!

This is the exact one we use – and it’s great.

On to this week’s new recipe: it’s a super-speedy yoghurt and pomegranate mix! Really tasty (of course), and a great way to get extra fruit and seeds in. Gotta love those extra nutrients…

It can be made in 15 minutes – or even 5 (you’ll see!) – and there’s a vegan version too.

Enjoy!
