No time to eat well?
Hey healthy veggie,
I hope you’ve had an awesome week so far.
When I was young, one of my little sisters made couscous all the time. And I mean, all the time.
Whenever we had to make our own lunches, she made couscous.
I’d come home from school and guess what? Yep, there she’d be, eating couscous.
When we were a bit older, I visited her at college, and walked into her kitchen - naturally there was a bowl of couscous sitting on the side.
I’d tried a random bowl somewhere once - and thought it was awful. The consistency, the flavour, everything about it.
My sister insisted hers was miles better, and I’m sure it was. But to my regret I never tried it.
Now she lives on the other side of the world and the chance of her making me couscous is pretty slim :(
On a more positive note, whenever I eat couscous now, I think of her :)
These days I love couscous.
And this week, I’ve been eating a lot of couscous. We’ve been laying carpets, hanging wallpaper etc etc and time for food seems to be at a premium. So couscous it is.
The beauty of it is that you can make it as simple or as a gourmet (😉) as you like.
A simple bowl of the instant stuff with veggie stock, peas and cottage or cheddar cheese is ready in 4-5 mins. It packs a surprising amount of protein, too.
You can also spin it off in so many different ways. It’s still mega quick, and you can make it unbelievable tasty for so little effort.
