Best summer recipes part 2

And welcome back to part 2 of my favourite summer recipes!

Now on to this week’s recipes - my next set of faves for summer!

Avocado Tomato Salad

This ain’t no ordinary salad - the flavour combo of avocado, tomato and balsamic is just amazing, and when you add a tiny amount of bitter from the rocket/arugula 🚀 you’ve got an absolute winner.

I hope you enjoy this salad as much as I do!

BBBBQB - Or ‘Black Bean BBQ Burgers’ if you’d prefer 😉

Barbecues are definitely something I love in the summer (in fact I just had one for my 40th birthday party 🥳).

But they can be difficult for vegetarians because you tend to feel lost about what to eat (I did for a while anyway).

Store-bought veggie burgers and sausages have got better over the years, but these BBBBQBs are the real deal 😎

Baked Potatoes

These were the real star of the show. Every time I looked about I saw another friend wondering off with a potato.

The best thing to do is cook them first (earlier in the day for example), and then reheat them wrapped in foil on the BBQ later.

A few minutes in the microwave will do (see guide) or the oven is great, too.

The guide also contains loooooads of different topping ideas.
